“All You Can Eat” and “fine dining” sound like two things that do not go together.

One brings to mind buffet restaurants with warming trays, harsh lighting and dishes sitting in pans waiting to be scooped up. The other brings to mind white tablecloths, sommeliers and plates built like sculptures.

At Sage we decided this is a false dilemma.

The problem with traditional All You Can Eat

Standard AYCE restaurants make money through volume and short sittings. The typical setup: a ninety-minute time limit, dishes prepared in bulk, and quality that bends to quantity. It works for the operator. It does not always work for the guest.

We wanted something else. We asked ourselves: what if we take the rush out of it? What if we prepare the dishes to fine dining standards? What if we fix the price up front, but let go of the clock?

How we solved it

Three choices make it possible.

  • One dish per person per round. No platters on the table, no half-empty plates. Each round brings you one dish, prepared to order. Want more? Ask for the next round.
  • Unlimited side dishes at no extra cost. Fries, bread and salad can be ordered as often as you like, to bridge the gap between rounds.
  • No time limit. We do not turn tables. You pay for an experience, not for a time slot. Three hours or five, that is your call.

We are not selling a table. We are selling an evening.

What the fixed price covers

The fixed price per person gives you access to the full AYCE menu: cold dishes such as sashimi, ceviche, carpaccio, oysters and maki, warm dishes such as cod, tournedos, black cod with miso and rack of lamb, soups, and all side dishes without limit.

Drinks and dessert are not included, and that is deliberate. Wine pairing is a personal thing and does not belong in a fixed price. Dessert is an experience of its own, for a different moment.

What the fixed price does not cover

We are open about the exceptions. Certain premium dishes sit outside the standard AYCE menu and are available on request at a surcharge. Our team will tell you before you order, not afterwards on the bill.
